Pumpkin Spice Chip Cake Cookies

Wooozaa that is one tongue twister of a cookie name. I dare you to say it 10 times fast! Or while you have a mouth full of cookies. Haha! I had pumpkin spice chips for the longest time. I was determined to find something fun to use them in. I was Googling different cookies recipes. I found one that looked fun to try. Then I saw it last night! I went to get the pasta out of the pantry. The box of perfectly pumpkin cake mix. It hit me! I needed to make pumpkin spice chip cake cookies.

Cake cookies are pretty much the only cookies that I can make well, consistently. I wish I could make a mean chocolate chip cookie. Maybe, some day. But, cake cookies, that’s a whole different story.

They are fast, easy, and the possibilities are endless. Today I want to introduce you to a new creation at our house. What I like to call pumpkin over load! 😉 As the kids and I were making them last night I was thinking it might be too much pumpkin. Then as we were eating them I thought, nope. These babies are GOOD!

Mr. E and I each ate two, then shared one of Miss L’s and Miss S’s.  Miss N wanted in on the action and shared also. There may have been tears when they realized we ate them. Mr. E and I looked at each other and we may have rolled our eyes. I thought the girls knew we were going to eat them…Never a dull moment around here.

What I love about these cookies is how simple they are. All you need is a pumpkin flavored cake mix, oil, water, one egg, flour, and pumpkin spice chips. Quick, easy, yummy, and pretty much no fails.

Gather your ingredients and let’s get baking the perfect fall cookie.

Add the egg.

Next I like to add the flour so I can use the 1/4 measuring cup for the flour, water, and oil.

Then add the water.

The oil comes next.

Then add the cake mix.

Mix with a hand mixer until all ingredients are mixed well.

Last add the amount of pumpkin spice chips are you want.

Bake these gems at 350 degrees for about 8 minutes. Get ready for your mouth to thank you for these pumpkin spice chip cake cookies.

Pumpkin Spice Chip Cake Cookies

Ingredients

  • 1 Perfectly Pumpkin Cake Mix or any pumpkin flavored cake mix
  • 1/2 cup oil
  • 1/4 cup water
  • 1 egg
  • 1/4 cup flour
  • pumpkin spice chips

Instructions

  1. Preheat the oven to 350 degrees.

  2. Mix the cake mix, oil, water, egg, and flour together.

  3. Mix in the Pumpkin Spice chips.

  4. Drop cookie dough on a greased pan. Bake for at least 8 minutes or until cooked through. 

Some fun varieties to try:

  • Lemon with chocolate chips (my fav)
  • Funfetti
  • Chocolate with peanut butter or mint chips
  • Yellow cake with chocolate chips
  • Red Velvet 
  • Spice Cake
  • chocolate chips, white chocolate chips, butterscotch chips, mint chips, pumpkin chips, peanut butter chips, possibilities are endless!

  1. I didn’t know there was pumpkin baking chips! I have some cinnamon ones in my freezer waiting to be used…. just haven’t decided how yet. I loved your recent Sunday motivation!

    1. They are awesome! I bought them last year…Look now with it being fall. That is when I bought them. Oh yum, cinnamon chips. Those would be fun. Thanks!! I am really liking the Sunday Motivational. I think I’ll keep doing it after Blogtober is done.
