Super Easy Cheesy Broccoli Soup

Who doesn’t love cheese and broccoli? This is a super easy cheesy broccoli soup recipe that you HAVE to try.

As soon as the weather starts to get cool I grab my soup cookbooks and recipes. Meal planning with a lot of soups in is the works. 🙂 Who else loves soups? They are usually easy, healthy, have loads of veggies, and just feel good for the soul. Today I’m going to share one of our favorites, for most everyone in the house, ha! Drum roll… well I guess the title already gave it away, LOL! It’s time to try this super easy cheesy broccoli soup. Like, I’m talking today.

A few years ago my awesome mom gave me a cookbook, Soup’s On by Valerie Phillips. My mom even was able to get Valerie to sign the cookbook. I know, I’m super cool. 😉

I have enjoyed this cookbook. Really the only section we have used is the vegetable soups because I am a vegetarian. Most of the soups we have tried have been delicious. A few have been okay, and the rest we haven’t tried. The recipes are usually pretty fast. And I’m all about quick and healthy dinners.

On to the recipe for Super Easy Cheesy Broccoli Soup (this is my new name for Broccoli Cheese Soup, you like?). One great thing about this recipe is it uses frozen broccoli, which means I usually have everything I need to make it. Another thing my hubby likes about this recipe is everything gets blended so there are no chunks. It makes a big batch so there are always left overs. And I like be able to get more veggies into our eating. Okay, so there are many great things about this recipe. 🙂

Super Easy Cheesy Broccoli Soup

Total Time 30 minutes
Servings 6 people

Ingredients

  • 3 Tbsp butter
  • 3 Tbsp flour
  • 2 cans vegetable broth
  • 2 cups milk
  • 1 Tbsp onion powder
  • 24 oz frozen chopped broccoli
  • 2 cups shredded cheddar cheese
  • salt, pepper, and nutmeg to taste

Instructions

  1. Melt butter in a large pot over medium heat.

  2. Sprinkle the flour over the butter and continue to stir for 2 minutes to make a roux.

  3. Add the vegetable broth, milk, onion powder, and chopped broccoli. Mix well. Turn the heat to high and let the mixture come to a boil. Stir occasionally.

  4. Reduce the heat to medium/low. The mixture needs to continue cooking until the broccoli is tender, about 10 minutes. Stir occasionally. 

  5. Remove from heat and let mixture cool for a bit. In two batches puree the mixture in a blender or hand held blender. 

  6. Returning both mixtures to the large pot. Add the cheddar cheese and stir until all the cheese is melted. Add salt, pepper, and nutmeg. ENJOY!

Recipe Notes

  • You can garnish the soup with Parmesan cheese or sour cream.
  • If you have fresh broccoli and onion you will need about 4 cups chopped broccoli and one large onion chopped.
  • The original recipe called for 1/3 cup dried onion. I never have that so I use onion powder. 
  • The original recipe called for milk or half and half. I also never have half and half so I have always used milk. 
  • I always add more then 2 cups of cheese.
