Super Easy Cheesy Broccoli Soup

Ingredients

  • 3 Tbsp butter
  • 3 Tbsp flour
  • 2 cans vegetable broth
  • 2 cups milk
  • 1 Tbsp onion powder
  • 24 oz frozen chopped broccoli
  • 2 cups shredded cheddar cheese
  • salt, pepper, and nutmeg to taste

Instructions

  1. Melt butter in a large pot over medium heat.

  2. Sprinkle the flour over the butter and continue to stir for 2 minutes to make a roux.

  3. Add the vegetable broth, milk, onion powder, and chopped broccoli. Mix well. Turn the heat to high and let the mixture come to a boil. Stir occasionally.

  4. Reduce the heat to medium/low. The mixture needs to continue cooking until the broccoli is tender, about 10 minutes. Stir occasionally. 

  5. Remove from heat and let mixture cool for a bit. In two batches puree the mixture in a blender or hand held blender. 

  6. Returning both mixtures to the large pot. Add the cheddar cheese and stir until all the cheese is melted. Add salt, pepper, and nutmeg. ENJOY!

Recipe Notes

  • You can garnish the soup with Parmesan cheese or sour cream.
  • If you have fresh broccoli and onion you will need about 4 cups chopped broccoli and one large onion chopped.
  • The original recipe called for 1/3 cup dried onion. I never have that so I use onion powder. 
  • The original recipe called for milk or half and half. I also never have half and half so I have always used milk. 
  • I always add more then 2 cups of cheese.
